  1. In a heatproof bowl set over (not in) a saucepan of simmering water, combine the egg whites, sugar, salt and water.
  2. Cook over medium, stirring constantly, until the sugar has dissolved (or the mixture registers 150°F on an instant-read thermometer), 2 to 3 minutes.
  3. Transfer to a large bowl.
  4. Using an electric mixer, beat on medium high until glossy, stiff peaks form (do not overbeat), about 3 minutes.
  5. Reduce speed to low, add vanilla and beat until just combined.
  6. Use immediately.
