  1. Take your split peas...
  2. and put them in a large pot with the 8 cups of water and the boullion cubes. (If you have broth, you can use 5 cups of water and 3 cups of broth instead.)
  3. Add the carrots,
  4. the potatoes,
  5. the onions,
  6. the turkey wings (or legs),
  7. the garlic powder,
  8. the oregano,
  9. and the bay leaves.
  10. Bring to a boil.
  11. Turn the soup down to a simmer, and cook for 2 to 2 1/2 hours, until the turkey is falling off the bones.
  12. Pick out the meat, set it aside, and run the soup through a food mill.
  13. This gets rid of lumps, the bay leaves, and any errant turkey tendons. If you don't have a food mill, pick out the bay leaves and any noticeable meat shrapnel and hope for the best. I'm sure it will be just fine. You know me: I'm uptight.
  14. Pick the meat off the bones and set aside the nice clean pieces.
  15. Serve the soup with the meat stirred in or scattered on top for visual sass.

I was at Aldi's and saw the smoked wings and thought, "I'm just going to buy these and turn them into something." I had Bea Google "Smoked Turkey Wings Recipe" in the car on the way home and she came up with this. It's designed to be a crock pot recipe, but we didn't have time to do it like that and it worked great on the stove. It was very quick to prep and yummy. It's also nice to have a pea soup recipe that's smoky without pork.
