Ingredients
- 4 tablespoons olive oil separated
- ½ cup basil fresh leaves; packed
- 1 shallot peeled
- 2 cloves garlic peeled
- salt
- black pepper
- 2 pounds potatoes peeled and cut into 1½-inch pieces
- ½ cup Parmesan cheese at least; can be more
Instructions
- Preheat the oven to 400°F.
- Purée two tablespoons of the oil, basil, shallot, garlic, pinch of salt and a few grinds of pepper until smooth.
- Oil a baking sheet.
- Toss the potatoes on a baking sheet with the remaining two tablespoons of oil and sprinkle them with salt and pepper.
- Bake the potatoes 35 minutes.
- Add the sauce, toss, and bake for another 20 minutes, or until the potatoes are tender.
- Toss with the Parmesan cheese.
