  1. Hard boil as many eggs as you wish. When cooked, cool them in the refrigerator or with cold water in the sink.
  2. Peel the eggs and carefully cut them in half longwise, placing the egg white halves on a plate...
  3. ... and the yolks in a fine mesh strainer/sieve.
  4. Press the yolks through the mesh with the back of a spoon. (This step is not required, but it make the filling perfectly smooth.)
  5. Add to the sieved yolks the mayonnaise to desired consistency and curry powder to taste. Start with a little and add more as needed. If you prefer dill, use that instead of the curry powder. You may add a pinch of salt if you wish, but typically the mayo adds enough. Stir until smooth.
  6. Fill egg halves carefully with the filling (use a spoon or you can use a pastry bag if you're feeling fancy). Garnish with a sprinkle of paprika, or if you've flavored them with dill, you may put a a little dill on top.
