Ingredients
- 1 1 pound box pasta
- mayonnaise about half a big jar
- chicken cooked, cold, cut into small chunks
- 3 eggs hard boiled (optional)
- peas frozen, about a cup (optional)
- honey (optional)
- curry powder (optional)
- raisins or currants (optional)
- dill (optional)
Instructions
- Cook the pasta according to the package's directions.
- Drain the pasta in a colander. I don't rinse it.
- Let the pasta cool in the colander. If you don't let the pasta cool before you mix in the mayo, it gets oily and weird.
- Cook the peas lightly in the manner of your choosing until still green. Drain and cool.
- If you want to include eggs, chop them finely.
- Put the chicken pieces, peas and eggs (if desired) in a large bowl.
- Throw on your cool pasta...
- ... then start with a cup of mayonnaise...
- ...and mix well. Add more mayonnaise if you wish to hit your desired level.
- If you are interested in the optional flavor profiles, one is adding a little honey and curry powder. You can add raisins or currants to this one instead of the peas.
- Another thing I do almost every time is add dill to taste. (Although I probably wouldn't do that with the honey curry version.) Fresh is awesome if you have it!
Recipe Notes
Summer 2015
This can be a full-on meal if there is enough chicken, proportionally. Very popular with the kids, although Nina does not like the honey version. Good served on lettuce as a salad/salad component.
