  1. Put two cups of the apple juice in a medium sauce pan.
  2. Chop the apricots into a 1/4 inch-1/2 inch dice. (I used two bags of Aldi's dried apricots: not all are shown here on the board, yet.)
  3. Add apricots to 2 cups of juice and simmer...
  4. ...and stir...
  5. ...until they are soft and most of the juice has been absorbed/simmered off.
  6. Measure out the 12 cups of sugar.
  7. Take a cup of that measured out sugar, put in a separate bowl with the two packages of pectin and mix them thoroughly.
  8. Put the remaining 10 cups of apple juice in a large pot. Add the pectin/one-cup-of-sugar mixture and stir it well. Bring it to a boil.
  9. Add the remaining sugar and bring it back to a boil.
  10. Add the softened apricots and bring it back to a boil.
  11. Process in a hot water bath to can, boiling for 15 minutes.

Pretty and tasty. Adapted from this recipe. Not sure how to keep the chunks from floating. I tried flipping the jars periodically as they cooled and that helped a little. Could have added more fruit. I'd like to try this with other dried fruits, like cherries.
