I’m here to tell you that when Big Y has kielbasa on sale Buy One Get Two Free, there are three of these in my freezer, pronto.
Now, Western Mass takes its kielbasa seriously. That said, it doesn’t take any gravity or very much time at all to whack this sausage into chunks, crisp it up (it’s almost always sold pre-cooked), and throw it on a plate.
Bill Denneen made bacon like this when I visited his family in December of 2014, and I was highly skeptical, but subsequently impressed. It really comes out crisp, and all of the oil stays in the paper towels, so the bacon isn’t as greasy, and the cleanup is incredibly easy.
