stems removed, cut in thin strips
cooked, peeled and sliced thin
Preheat oven to 400°F.
Caramelize onions in oil in large oven-proof pan.
Add pepper and cook until soft.
Add chard and cook until that is soft.
Layer on sweet potato.
Scramble eggs with some milk.
Pour over mixture in pan.
Sprinkle with a little salt and pepper.
Can cut in chunks of cheese, if you wish.
Cook in oven for 30 minutes or more until set.
Made up out of leftovers. Easy, really good, and everyone liked it.
