  1. Gather ingredients and line crockpot with crockpot liner. (If you don't have one, you can just grease the pot, but it's harder to clean.)
  2. Pour coconut milk into into a crock-pot, and add remaining ingredients in order listed.
  3. Cover. Cook on low 5 to 6 hours.
  4. It will look like this when it's done.
  5. Remove the chicken to a plate, then pour the liquid into a small pot to thicken it to sauce. Bring to a simmer on the stovetop.
  6. In a separate cup, whisk cornstarch in a bit of the liquid until smooth.
  7. Whisk the cornstarch mixture into the pot of simmering liquid, and stir as it cooks until slightly thickened.
  8. Plate chicken, and...
  9. ...sauce it!

Good – delicious! Could make this with skinless boneless thighs to make it easier to serve and eat. I've served this over rice both brown and white, with potatoes as shown, and over couscous. Easy and everyone loves it.
