  1. Put the lentils in a pot, and cover them with water to a few inches above them. You're supposed to check for little stones, but I never have. Beware, I guess.
  2. Bring the pot to a boil, then turn it down to a low simmer. Cook for at least a half hour, until the lentils are tender. Keep an eye on the water level, adding more if the level has dropped to the top of the lentils.
  3. When lentils are tender, drain them.
  4. Serve lentils over the rice, with sesame oil and tamari to taste.
Recipe Notes

This is so yummy: comforting, warm, inexpensive. We often cook broccoli and mix it in with this for color and vitamins and texture. That's even more delicious! Greater than the sum of its parts. Winter in a bowl. 🙂

If you're not used to using toasted sesame oil, note that it is different from plain sesame oil with which you'd cook. Toasted sesame oil is a flavoring agent, and wouldn't be used to actually cook with. Plain sesame oil doesn't have the toasted flavor.

Also, I always like tamari better than soy sauce; I find soy sauce slightly metallic. If you don't have any tamari, though, soy sauce will do.
