For the puffs:
For the filling:
  1. Preheat the oven to 450°F.
  2. Add the shortening and salt to the water boiling in the pot, and stir until the water boils again.
  3. Lower the heat, add the flour all at once and stir vigorously until the mixture leaves the sides of the pot.
  4. Remove the pot from the heat.
  5. Add the eggs one at a time, beating thoroughly after each addition.
  6. Add the sugar and grated rinds.
  7. Shape the cookies on ungreased cookie sheets.
  8. Bake at 450°F for 20 minutes, then 350°F for 20 minutes.
  9. Remove the puffs from the oven.
  10. Beat together the ricotta, chocolate, rind, almond extract and powdered sugar to taste.
  11. Fill the puffs when they're cool.
