Ingredients
Instructions

    In a bowl or container, whisk together the oil...
  2. ... lime juice...
  3. ... sugar...
  4. ... sesame oil ...
  5. ... salt...
  6. ... and pepper.
  7. Shake or otherwise mix the dressing well.
  8. Take your romaine...
  9. ... and break it into bite sized pieces into a salad spinner. Examine for rust spots and remove!
  10. Rinse and spin it clean.
  11. Put the lettuce in a large bowl.
  12. Take your carrots...
  13. ... and peel and grate them into the lettuce bowl.
  14. Take the chicken meat off the bones and shred it.
  15. Put the chicken in with the lettuce.
  16. Take the Chinese noodles...
  17. ... and sesame seeds...
  18. .. and add them to the salad bowl.
  19. Toss everything with the dressing to combine.
  20. Enjoy!

You can optionally just serve the salad with the sesame seeds and noodles sprinkled on top instead of mixed in: that would make it easier to put away the leftovers without the noodles getting soggy. We had this on a visit with Carlos and he had four big plates of it.  🙂

I served this for Bea’s first night back from her first summer at Camp Rowe. Delicious, cool and crisp. The kids all loved it.
