Ingredients
- 1 to 1 1/2 pound piece salmon
- tamari or soy sauce
- 1/4 cup stone ground mustard
- 1/4 cup sour cream or regular cream
- 2 tablespoons olive oil
- 2 teaspoons sugar
- 2 tablespoons dill
Instructions
- Preheat oven to 425°F.
- Put salmon, skin side down, in a pan with slight edges (so it doesn't leak in oven).
- Sprinkle salmon liberally with tamari and make sure it is coated.
- Put salmon in middle of heated oven and set timer for 15 minutes. (If it's a particularly thin piece, set timer to check at 10 minutes.)
- While salmon cooks, make sauce. Start with mustard...
- ...add the sour cream or cream...
- ...the olive oil...
- ...the sugar...
- ...the dill...
- ...and stir it up. All amounts here can be altered to taste. I added a little more mustard and dill.
- Remove fish from oven when it separates cleanly when poked with a fork, but before it's dry inside.
- Plate fish with sauce.
- Enjoy with a game, but don't get sauce on the cards.

Bea said make it again: really good. A pound and a half of salmon made three serving, easily. I had the leftovers cold the next day, and they were good that way, also. The original recipe made way too much sauce, so I cut the numbers in half above. Adapted from this recipe.
