  1. Preheat the oven to 325° F.
  2. Mix the milk, salt, sugar, butter, vanilla and eggs.
  3. Stir the rice into the egg mixture.
  4. Add the lemon rind, juice, and raisins if desired.
  5. Pour into a buttered baking dish.
  6. Bake until set; about 50 minutes.
