  1. Preheat oven to 425°F.

  2. Line the pie crust with foil and fill halfway up with dried beans, rice, or baking weights.
  3. Bake in the preheated oven for 7 minutes.
  4. Remove foil and weights and bake until golden brown, about 5 minutes.
  5. Reduce oven to 350°F.
  6. Cook bacon in a skillet or microwave until crispy.
  7. Drain if cooked in skillet. Crumble.
  8. Whisk eggs, egg yolks, and half and half together in a large bowl.
  9. Add thyme and stir to combine.
  10. Sprinkle 1/3 cooked bacon and 1/3 cheese on the bottom of the baked crust.
  11. Ladle in half the egg mixture.
  12. Top with 1/3 cooked bacon and 1/3 cheese.
  13. Pour in remaining egg mixture and top with last 1/3 of bacon, and 1/3 of cheese.
  14. Put the filled quiche on a cookie sheet (so it doesn’t leak in the oven) and bake it until browned and set but no longer jiggly in the center, 40 to 45 minutes.
  15. Allow to cool slightly before serving.

This was really good: light and custardy.

Options: You could also caramelize some leeks or shallots or onions in some bacon fat or butter to add to the layers of this.
