  1. Preheat oven to 425°F.
  2. Cut each polenta log crosswise in half, then cut each half lengthwise into 6 slices.
  3. In 9 x 13-inch baking dish, place half of polenta slices, overlapping slightly.
  4. In 4-quart saucepan, heat oil over medium heat until hot.
  5. Add onion and cook 10 to 12 minutes or until tender and golden, stirring occasionally.
  6. Add garlic and crushed red pepper and cook one minute, stirring.
  7. Add spinach and cook 3 minutes to heat through, stirring frequently and separating spinach with fork.
  8. In medium bowl, whisk together milk and cornstarch.
  9. Stir in salt and all but 2 tablespoons of the cheese.
  10. Add milk mixture to spinach mixture in saucepan; heat to boiling over medium high heat.
  11. Reduce heat to low; cook 2 minutes, stirring occasionally. Remove saucepan from heat.
  12. Spoon half of spinach mixture over polenta slices in baking dish.
  13. Repeat with remaining polenta slices and spinach mixture.
  14. Sprinkle with remaining cheese.
  15. Bake 20 minutes or until hot and bubbly.

This was very good; everyone loved it. It’s a little heavy... definitely make again, but maybe try with fresh spinach. It would be a little more tender.
