  1. Preheat oven to 400°F.
  2. Butter muffin tin (1/3 cup volume per cup).
  3. Sift together flour, sugar, baking powder, baking soda, and salt.
  4. Melt butter.
  5. Whisk butter together with sour cream, egg, and vanilla in a small bowl.
  6. Stir butter mixture, pineapple and coconut into flour mixture until just combined.
  7. Divide batter among muffin cups and bake in middle of oven until golden and a tester comes out clean, about 20 minutes.

Good — they come out kind of dense and short, but delicious. Can use one cup chopped dried apricots and 1 tablespoon poppy seeds instead of pineapple and coconut. Recipe from Epicurious.com.
