Cook your pasta al dente and drain it in colander. Toss with a bit of olive oil or sesame oil to keep it from sticking together. The olive oil has little flavor; the sesame oil more so.
Toss pasta with MOST OF the triple batch of peanut sauce. Hold maybe a quarter of it back.
Peel and grate carrots; peel and slice cucumbers.
Plate pasta with vegetables and pieces of chicken, top with remaining peanut sauce.
March 2015 This could obviously, easily, be vegetarian without the chicken. It could also be nice with bean sprouts or scallions sliced over the top. The kids can't get enough of this, and Maura likes it, too.
