Ingredients
Instructions
  1. Preheat the oven to 400°F.
  2. Purée two tablespoons of the oil, basil, shallot, garlic, pinch of salt and a few grinds of pepper until smooth.
  3. Oil a baking sheet.
  4. Toss the potatoes on a baking sheet with the remaining two tablespoons of oil and sprinkle them with salt and pepper.
  5. Bake the potatoes 35 minutes.
  6. Add the sauce, toss, and bake for another 20 minutes, or until the potatoes are tender.
  7. Toss with the Parmesan cheese.
