  1. Preheat oven to 500°F with rack in middle.
  2. Cover a rimmed baking sheet with foil and sprinkle it with 4 tablespoons oil.
  3. Combine bread crumbs...
  4. ... cornmeal...
  5. and 1 1/3 teaspoons salt in a large sealable plastic bag and shake to mix.
  6. Season fish with salt and pepper on both sides.
  7. Beat eggs in a medium bowl.
  8. Working with one piece at a time, dip fish in eggs, letting excess drip off
  9. ...then put in bag and shake to coat well with crumbs.
  10. Transfer fish to baking pan...
  11. ...and bake until undersides are golden, about 6 minutes.
  12. Drizzle fish with remaining 4 tablespoons oil...
  13. ...then carefully turn over and cook until golden and just cooked through, about 6 minutes more.
  14. Feel free to serve with a sauce of mayo and ketchup mixed together. This is Carlos' specialty to make.

I made this with cod this time and it was delicious, even though the texture of the fish is far more delicate. Be careful flipping it, so that it doesn't break!

I couldn’t find recipes on Epicurious for swai, so I used the fishmonger’s advice and looked for a catfish recipe. This was good and easy… everyone snaffed it down. Maura said definitely make it again, and she usually doesn’t even care for fish.
