  1. Add the rind to the butter; cream well.
  2. Add some sugar gradually, blend well.
  3. Add the salt.
  4. Add the juice to the creamed mixture, alternating with remaining sugar, until the frosting is of right consistency to spread.

This is enough to healthfully cover a two-layer cake. I used it to frost a checkerboard cake (made with checkerboard pans), which is three layers, and it was more than adequate. This is adapted from a lemon frosting recipe, which leads me to believe that a lemon version of this would be tasty, also. I just happened to have oranges, not lemons.
