  1. Preheat the oven to 400°F.
  2. Cut the squash in half and and scrape out the seeds.
  3. Place the squash halves cut side down on a baking sheet (cover it with foil first if you’re a lazy cleaner like I am), and bake for an hour, or until they're soft when poked with a knife.
  4. Turn the oven down to 350°F.
  5. While the squash is cooking, make the filling.
  6. Chop onions small. (This photo precedes their chopping.)
  7. Chop mushrooms fine.
  8. Sauté the mushrooms, onions and garlic in butter with a bit of salt and pepper until the onions are soft (I go quite a while: 20-25 minutes).
  9. Drain well if there is any liquid (save liquid for basting).
  10. Combine the onion mixture with the remaining ingredients: cottage cheese...
  11. ... bread crumbs... If you are using bread crumbs in the filling, you can use dried crumbs or panko, or you can make your own crumbs. I "crumbed" 2 slices of whole grain bread in the Cuisinart (I just ripped them into 6-8 pieces each first. They didn't need to be particularly stale.)
  12. ...salt and pepper...
  13. ...the basil and the parsley. I've made this with fresh parsley, but this time only had dried. That's fine. Use less if it's dried.
  14. Fill the squash cavities with the mixture.
  15. Bake uncovered for 25-30 minutes, basting with liquid from the sauté as they cook. If there was no liquid, you can use a little butter or broth.
  16. Serve either halves, or slice each half in half again.

We made this feed 6 people. It didn't kill Migdalia who is allergic to mushrooms and who really liked it but didn't know that that was what was in the filling. (She did take a few antihistamines afterward.) Carlos loved the filling the most and Nina tried the filling but stuck with the squash. Bea, Maura and I snaffed it all down. A lovely meal for a frosty day.
