  1. Peel and chunk up your potatoes. Boil them in enough water to cover them. Remember: the smaller the pieces, the more quickly they'll cook.
  2. Drain 'em.
  3. Cut up the butter in pieces to help it melt more quickly.
  4. Start with a light splash (1/4 cup or so) or milk or half and half. You can always add more if they're too stiff, but you can't get it out.
  5. Mash them up and give them a little sprinkly sprinkle of salt to taste.
