  1. Sift the flour and salt into a medium bowl.
  2. Beat the butter and granulated and brown sugars with a mixer on medium-high speed until pale and creamy, about 3 minutes.
  3. Reduce the speed to medium-low, and add the yolk, then ½ cup of maple syrup, beating well after each addition.
  4. Add the flour mixture, and beat until just incorporated.
  5. Shape the dough into 2 disks, wrap each in plastic, and refrigerate for at least 2 hours (or up to 2 days).
  6. Preheat oven to 325°F.
  7. Roll out one disk of dough to ¼-inch thickness on a sheet of lightly floured parchment.
  8. Place parchment with the dough on a baking sheet.
  9. Freeze until firm, about 15 minutes.
  10. Coat baking sheets with cooking spray, line with parchment, and spray parchment.
  11. Cut out cookies from frozen dough and space 1 inch apart on sheets.
  12. Freeze the cookies until firm, about 15 minutes.
  13. Bake the cookies until the edges begin to turn golden, 14 to 16 minutes. Transfer the parchment with cookies to wire racks, and let cool for 5 minutes.
  14. Brush the cookies with 2 tablespoons maple syrup, and sprinkle with 1/2 of the sanding sugar.
  15. Let them cool.
  16. Repeat with remaining dough, maple syrup, and sugar.
