  1. Boil the pineapple and its juice in a sauce pan.
  2. Add the Jell-O. Boil and stir for one minute until the Jell-O is dissolved.
  3. If you can't find a big box, use two little ones. I bought these at the same time: two different package designs!
  4. I guess the world was tired of Arctic Grapes and primed for magic mousse (sic).
  5. Cut the cream cheese into small pieces. This helps them dissolve.
  6. Beat in the cream cheese. (Do NOT leave lumps: they’ll be waxy and weird.)
  7. Stir in the evaporated milk.
  8. Chill to set.

I tried making this in a mold (a bundt pan, actually) for the first time this year. I thought it would be hard to get out, so I dipped the outside of the pan in hot water for too long, and melted the outside of the Jell-O. Try again! Just dip for a few seconds.

Been making this for years. Carlos’ favorite Thanksgiving dish. Thanks Maggie!
