  1. Heat 1 tablespoon of oil in a large nonstick frying pan over medium heat.
  2. Add the chicken and sauté until it is cooked through, about 5 minutes per side. Cool.
  3. Cut the chicken crosswise into ¼-inch-thick strips.
  4. Cook the pasta in a large pot of boiling salted water until al dente. Drain well; transfer it to a large bowl.
  5. Add 1 tablespoon of oil to the pasta; toss it to coat.
  6. Add chicken, snow peas, pine nuts and parsley; toss it to incorporate all the ingredients.
  7. Whisk the lemon juice and mustard in a medium bowl.
  8. Add the remaining 3/4 cup oil in a thin stream, whisking constantly (making a mayonnaise).
  9. Season the mayonnaise dressing to taste with salt and pepper. Toss the pasta with enough dressing to coat.
  10. Cover and refrigerate. Toss before serving.
