  1. Preheat the oven to 300˚F.
  2. In a large bowl; combine flour, baking powder, sugar and salt.
  3. Cut in the butter.
  4. In a small bowl, beat the eggs with the lemon extract.
  5. Add the egg mixture to the dry ingredients.
  6. Add the lemon peel, and mix well. If the dough is too sticky, feel free to add a few more tablespoons of flour.
  7. Divide the dough into four equal parts.
  8. Shape each into a loaf, about 12 inches long and 2 inches in width.
  9. Place loaves on greased or parchment paper-lined cookie sheets.
  10. Bake 15 to 20 minutes, cool slightly, then cut into slices on a bias.
  11. Drizzle the cookies with melted chocolate chips.

Made these with Marie. They were very easy, and moister than I thought they’d be.

I make these every Christmas now.
