  1. Preheat the oven to 375°F.
  2. Start your onions cooking in a little bit of olive oil. Cook them until they're toasty tan.
  3. Grease a 12x7x2 inch baking pan. (If you use a deeper square pan, it will take longer to cook.)
  4. Combine the Bisquick...
  5. ... milk and oil...
  6. .. the browned onions (don't wash the onion pan!) ...
  7. ... and the first two eggs.
  8. Mix well.
  9. Spread the mixture in the baking dish.
  10. Put the spinach in the onion pan...
  11. ... and cook it until it's wilted, but still bright green.
  12. Turn off the heat and take the pan off the burner. Drain any liquid out of the spinach. Add the cottage cheese...
  13. ... the cheese...
  14. ... the garlic...
  15. ... the salt...
  16. ... the second two eggs...
  17. ... and the Parmesan cheese.
  18. Mix well.
  19. Spoon the mixture evenly over the batter in the dish.
  20. Bake it until set, about 25-30 minutes. If it's in a deeper dish, it could take up to 15-20 minutes more.
  21. Let it stand five minutes before cutting.

Bea and I made this, and came to the conclusion that our instincts from 2008 were correct: the filling is delicious, and the crust is utterly forgettable. Next time, do not make the crust: just make the filling and serve it over something else.  (Add the onions to the filling instead of the crust.) It is really good.

The kids really liked this. I made it with onion powder and fresh spinach I pre-cooked in the microwave then drained in a strainer. This would be good even without the crust, served over polenta or pasta.
