  1. Preheat oven to 375°F.
  2. Combine flour...

  4. ... baking powder...
  5. ... baking soda...
  6. ... and sugar in a large bowl.
  7. Cut in the butter.
  8. Measure out the buttermilk. If you don't have buttermilk, you can get the same chemical reaction and a similar flavor by mixing plain yogurt or sour cream with enough milk to a buttermilk-like thickness.
  9. Mix the egg and with the buttermilk.
  10. Add buttermilk mixture to dry ingredients.
  11. Stir it in.
  12. Turn the dough onto a floured surface and knead two to three minutes.
  13. Divide dough in half.
  14. In this case I wanted to make one loaf with currants, so I kneaded in 1/4 cup of currants to one half of the dough.
  15. Shape dough in two round loaves in greased pie tins or cake pans.

    Cut a large cross into the top of each.

  16. Bake 35-40 minutes.
Recipe Notes

Mom would often make this for Saint Patrick's day. Always awesome... like a big, honking biscuit. Make sure they’re baked enough and not doughy in the middle. May take longer than the recommended amount of time.
