  1. Preheat the oven to 350°F.
  2. Grease a 9 x 5-inch loaf pan (or two smaller ones).
  3. Combine the flour, baking soda, salt and spices in a small bowl.
  4. In a separate bowl, cream the butter and sugar.
  5. Blend the eggs well into the butter and sugar mixture.
  6. At a low mixer speed, add the dry ingredients to the butter mixture, alternating with the pumpkin, beginning and ending with pumpkin.
  7. Stir in ½ cup of the nuts.
  8. Turn the batter into the prepared pan(s).
  9. Sprinkle the batter with the remaining ½ cup of nuts.
  10. Bake 65-75 minutes (for the large pan).
  11. Let the bread stand for several hours before slicing.
Recipe Notes

*NOTE: Can use 2 tablespoons of pumpkin pie spice instead
