Ham Style Kielbasa with Pineapple

This delightful melange came about as an organic series of choices based on what was in the pantry and refrigerator.  I had kielbasa and carrots. And rice. And a can of pineapple. The rest was history.

Instructions
  1. Melt the butter in a large frying pan.
  2. Brown the kielbasa in the pan.
  3. Throw the carrots in while the kielbasa is browning, and let them brown up a little, too. This could take 20 minutes or so.
  4. Throw in the can of pineapple and its juice, the brown sugar, the cloves and the mustard. Stir well and cover.
  5. Cook, stirring frequently until the carrots are almost done.
  6. Remove lid and boil down sauce until thickened.
  7. Serve it up!

I served this over white rice cooked in chicken broth. The kids wolfed it down and Maura came by and made sure there were no leftovers. It was requested that we make it again. Yum! It's reminiscent of  little bites of Easter ham.
