Chickpea-Spinach Mixture

G-Nut Special Sauce
  1. Combine the broth, peanut butter, tomato paste, lemon juice and garlic in a small pan and simmer over low heat for one to two minutes.
Sweet Potatoes
  1. Poke holes all over the sweet potatoes with a fork.
  2. Microwave the potatoes on high seven to ten minutes or until soft; let them cool in the microwave.
Chickpea-Spinach Mixture
  1. Meanwhile, heat the oil in a large skillet over medium heat.
  2. Sauté the onion for four minutes, or until it is beginning to brown.
  3. Add the chickpeas and sauté two minutes more.
  4. Stir in the spinach, reduce heat to low, and simmer three to five minutes or until the spinach is wilted.
Back to the Sweet Potatoes
  1. Scoop the sweet potato flesh into a bowl and mash with the cumin, lemon juice, salt and turmeric.
Assembly
  1. Ladle the sweet potato mixture into two bowls.
  2. Top with the chickpea-spinach mixture, and cover with the sauce.
  3. Garnish with the peanuts and serve warm.

This was really yummy and very easy — and fast, if you don’t count the sweet potato baking time. I made a triple batch, which we polished off. Could have made twice again as much of the spinach-chickpea mixture. Loved by all. Make again soon. Recipe from Vegetarian Times.
