  1. Preheat oven to 375°F.
  2. In plastic bag, combine the crumbs and cheese. I used plain crumbs this time; you can use seasoned if you wish.
  3. Brush all sides of the filets with mayonnaise. (Make sure you put the mayo in a bowl or on a plate before you do this so you don't get raw fish schmoo in the mayo jar.)
  4. Shake the coated filets in the bag to coat with the crumb mixture. You can get fancy with a ziplock; I tend to use a fruit bag from the grocery store.
  5. Spread a bit of olive oil in a shallow baking dish.
  6. Arrange the filets in single layer in a shallow baking pan.
  7. Bake them 20-25 minutes or until they're golden and the fish flakes easily.
