Ingredients
- ¼ cup bread crumbs fine dry (Italian seasoned or plain)
- ¼ cup Parmesan cheese grated
- 1 pound flounder or sole; filets (I used swai.)
- ¼ cup mayonnaise
- olive oil for the pan
Instructions
- Preheat oven to 375°F.
- In plastic bag, combine the crumbs and cheese. I used plain crumbs this time; you can use seasoned if you wish.
- Brush all sides of the filets with mayonnaise. (Make sure you put the mayo in a bowl or on a plate before you do this so you don't get raw fish schmoo in the mayo jar.)
- Shake the coated filets in the bag to coat with the crumb mixture. You can get fancy with a ziplock; I tend to use a fruit bag from the grocery store.
- Spread a bit of olive oil in a shallow baking dish.
- Arrange the filets in single layer in a shallow baking pan.
- Bake them 20-25 minutes or until they're golden and the fish flakes easily.

Made with swai, which is like catfish. Really good.
