  1. Preheat the oven to 425°F.
  2. Melt the butter in a sauce pan.
  3. Stir in the flour to form a paste.
  4. Add the white sugar, brown sugar and water; bring to a boil.
  5. Reduce the temperature and simmer for five minutes.
  6. Meanwhile, place the bottom crust in your pan.
  7. Fill the crust with apples, mounded slightly.
  8. Cover with a lattice work of crust.
  9. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
  10. Bake the pie for 15 minutes at 425°F.
  11. Reduce the temperature to 350°F and continue baking for 35 to 45 minutes.

Faced with two tote bags of self-picked apples, I made a double volume version of this pie in a lasagna pan with two packages of store-bought crust, and a double batch of this suggested butter-flour-sugar mixture. I only had white sugar and whole wheat flour, but it worked out very well and was not soupy. I like the fact that it doesn’t have spices. Delicious.
