Ingredients
- 5 heaping cups mixed fresh apples, peaches, pears and/or plums skinned and chopped (I used 4 nectarines, 2 pears, 3 apples)
- 1 cup water
- ¼ cup cider vinegar
- ¼ cup light brown sugar
- ¼ teaspoon salt
- 2 teaspoons tamari
- 1 clove garlic crushed
Instructions
- Combine everything in a heavy saucepan and bring to a boil.
- Turn heat down and simmer, uncovered until all the fruit is tender, about a half hour.
- Cool thoroughly before serving.
- Can leave it chunky, or mash it lightly. Don’t purée it: it will have a weird texture.
