Ingredients
Instructions
  1. Preheat the oven to 400°F.
  2. Liberally butter 12 non-stick small tart molds or a mini-muffin pan. (Actually, use tiny cupcake liners. They stuck when I just greased the tins.)
  3. Put the molds on a sheet pan, and set aside until ready to fill.
  4. In a large bowl, stir to combine the almonds, sugar, flour, salt, and the orange zest.
  5. Add the melted butter to the almond mixture and combine completely. Set aside.
  6. Beat the egg whites until they hold a soft peak.
  7. Using a rubber spatula, gently fold the egg whites into the almonds.
  8. Spoon the batter into the molds/pan, leaving some room to rise.
  9. Top with a small prune.
  10. Bake for 7 minutes.
  11. Reduce the heat to 375°F and bake for another 10 minutes.
  12. Turn the oven off and let the financiers cool in the oven for another 10 minutes.
  13. Remove the pans and let the cookies cool.
  14. Dust them with powdered sugar and serve.

Delicious, but completely stuck to the pan. Use little cupcake liners next time. Everyone really liked these.
