  1. Preheat oven to 350°F.
  2. Line a rimmed baking sheet with parchment paper, and spread coconut in a single layer on parchment.
  3. Place in oven until golden and toasted, about ten minutes, stirring occasionally to color evenly.
  4. Remove from oven; let cool completely.
  5. In a medium bowl, combine toasted coconut, almond extract, and melted chocolate. Stir gently until combined.
  6. Press about one tablespoon coconut mixture onto a parchment-lined baking sheet. Repeat with remaining mixture.
  7. Place in the refrigerator until set, about 20 minutes.
  8. Keep in refrigerator until ready to serve.

Yummy! Just used ½ a bag of chocolate chips, about 2/3 of a bag of coconut, toasted until quite crisp, and a few drops of almond. Martha Stewart Living
