  1. Preheat the oven to 350°F.
  2. Line 16 cupcake cups with paper liners. Set the pans aside.
  3. Melt the chocolate in the microwave; let it cool.
  4. Sift together the flour, cocoa, baking powder and salt. Set aside.
  5. Whisk together the oil, maple syrup, soy milk, vanilla and Grand Marnier until foamy, then add the orange peel.
  6. Add the wet ingredients to the dry ingredients and stir to combine.
  7. Fold in the melted chocolate.
  8. Fill the paper cupcake liners with batter ¾ of the way.
  9. Bake the cupcakes at 20-25 minutes, until a toothpick inserted into the center comes out clean.
  10. Cool.

Made these for Carlos’ third birthday… they were great and rose nicely. Would definitely make again. (They contain no refined sugar.)
