  1. Preheat the oven to 325˚F.
  2. Using a deep heavy pot or Dutch oven, layer as follows: potatoes...
  3. ...salt and pepper, shake of parsley, extremely generous shake of cheese...
  4. ...chicken pieces, sprinkle of oil, then repeat. Make as many layers as needed to use up your ingredients and fill the pot.
  5. Cover the pot and bake at least two hours… longer is definitely ok.
  6. Cook until the oil from the chicken has permeated the potatoes and they’ve gotten crispy on the edges.
  7. There you go!
Recipe Notes

This is the kind of thing Grandma Martone would put in the oven before church and let cook for hours until we were back. You should cook it until the chicken is very tender. It is insanely good and makes your house smell great. We (Carol, Dad and I) have tried to replicate the recipe, but there are a few mysteries. (It is supposed to be basil or parsley?) This seems close.

NOTED IN 2015: It's parsley, not basil. Tasted often enough to confirm.
