This is the kind of thing Grandma Martone would put in the oven before church and let cook for hours until we were back. You should cook it until the chicken is very tender. It is insanely good and makes your house smell great. We (Carol, Dad and I) have tried to replicate the recipe, but there are a few mysteries. (It is supposed to be basil or parsley?) This seems close.
