  1. Cook the pasta according to the package directions, drain, and return it to the pot.
  2. Heat broiler.
  3. Add the artichoke hearts, spinach, Parmesan, half the mozzarella, and ¼ teaspoon pepper to the pasta and toss to combine.
  4. Transfer the mixture to a shallow 2-quart or 8-inch square broiler proof baking dish and sprinkle with the remaining mozzarella.
  5. Broil until the cheese is browned in spots, 2 to 3 minutes.

This was quick and everyone really liked it. A double batch was almost completely finished off. I couldn’t find frozen creamed spinach, so I used frozen spinach soufflés. I microwaved them to almost done before adding them, since they have egg as an ingredient and I didn’t want that to be raw.  Recipe from Real Simple, April 2010.
