Ingredients
Instructions
  1. Sauté onion and garlic in oil taking care not to burn garlic. (Amounts of garlic and onion may be increased.)
  2. Add tomatoes, basil, oregano and sugar and cook one hour.
  3. Soak squid in cold water, rinse and drain.
  4. Reduce heat on sauce.
  5. Add calamari, salt and pepper.
  6. Simmer about 20 minutes: no longer, or the calamari might get tough.
