  1. Line a large tray or baking sheet with wax paper.
  2. In a large bowl, combine the powdered sugar, peanut butter, vanilla and butter, mixing until well blended.
  3. Shape into 3/4 inch-diameter balls.
  4. Arrange on baking sheets. Freeze one hour.
  5. Melt chocolate in microwave, stirring until smooth.
  6. Dip each ball into the chocolate until almost covered, leaving some of the peanut butter mixture exposed on top.
  7. Remove balls carefully from chocolate with spoon.
  8. Place the balls on the tray and refrigerate until firm, about two hours.
  9. After candy is firm, take paring knife and gently "whittle" away extra chocolate on bottoms so each piece is round.

Made these with Marie, and they were delicious. Lost the recipe for a year until I found it in December 2009, at the bottom of the cookie cutter bucket. Very popular: have to make them for holiday plates. Have made with white chocolate, milk chocolate and dark chocolate chips to make a nice mix on the plate. Time consuming: I recommend watching holiday specials on TV while rolling and dipping. I double this for Christmas giving.

Doubling this is great, just DO NOT TRY TO MAKE THE DOUBLE BATCH ALL AT ONCE in a regular KitchenAid mixer bowl. It doesn't fit and makes a horrible mess.
