Broccoli Au Gratin Soup

  1. Sauté the onions in the butter until they are translucent.
  2. Add the broccoli and cook three more minutes.
  3. Add the milk and bouillon, heat to simmering.
  4. Purée the soup in a blender.
  5. Add the ricotta and whiz again until smooth.

This is an old Weight Watchers recipe that is actually good. I might add a little curry powder or something to sass it up on occasion.
