I got this recipe from the comments and reviews section on another Epicurious.com banana bread recipe. It said, “If this isn’t the best, moistest banana bread you’ve ever had, I’ll eat the peels.” Seemed worth a shot, and it was. Really flavorful, and it’s become my go-to banana bread recipe. I always have overripe bananas in the freezer: as soon as they get to that point in the fruit bowl, I peel them and put them in a ziplock bag, squeeze out the extra air and save them until I have three. When I do, I can make this! I love walnuts but never use them because the kids don’t tend to like them.
